Today, that tradition continues under the leadership of our current Head Chefs, Justin Mellott and Bailey Free.

Bailey brings a refined palate and thoughtful creativity to the kitchen, grounding each dish in balance, precision, and a deep respect for quality ingredients. Together, and with the influence and mentorship of Executive Chef David Rosen, they strive to present memorable dishes that are both sophisticated and intriguing, showcasing their ingenuity with ingredients and their shared zeal for enticing flavours.
